Grapefruit & Advocado Salad? Low Carb and Weight Loss

I happened upon this beauty while watching Queer Eye (an interesting and entertaining watch) on Netflix. It caught my eye for two reasons: 1) I’m trying to eat the rainbow, and these colors are gorgeous #BigSwoon, and 2) I love advocados, and I love sweet, red grapefruits.
Instead of going back to the episode to catch the recipe, I Googled a few, and thought this to be my best bet:

Except, I didn’t have white wine vinegar, so I used balsamic vinegar. I also added this whole grain garlic mustard to my vinaigrette.
I wasn’t quite sure what to expect from this salad, but if I had any, they would have been blown out the water. The combination was perfection! The sweet acidity of the dressing paired extrememly well with the nuttiness of the advocado, and the coolness of the grapefruit.
Considering that grapefruits and advocados are both packed with all that good nutrition stuff, and even though this dish is an appetizer, I didn’t have to stand over a hot stove, I’ll definitely be making this again.
Oh, I haven’t been really successful at controlling my carbs and I’ve been feeling some of my health scare symptoms resurface…another post for another day. A couple years ago, I introduced myself to a low carb lifestyle because it greatly decreased the occurrence of those symptoms. So today I decided to purposely low carb. For me, that means keeping my carb count to less than 50 grams a day.
I’m also ready to focus on weight loss. As opposed to just accepting (and loving) it as a byproduct of the veganism lifestyle, now, I’m going to pursue it. I actually went out and bought a scale! I threw my former one away after being too obsessed with the numbers. I now need it to be accountable for my progress.
Today, I weigh 207 pounds, which is great! Right around Christmas, I was around 218. And a few years ago, I was around 235. My goal is to lose 10 pounds by the end of February. A very attainable goal. I’m 1000% sure that low-carb will help me get there, with a bit more ease.
